When I went keto, the first thing I mourned was Mexican food. Not the cheese-and-meat kind — that part’s easy. I’m talking about the sauces. The deep, smoky, slow-cooked salsas you get at a real Mexican restaurant, the kind that taste like someone’s grandmother spent all afternoon over a stove. That’s what I missed.
So I rebuilt them at home. And honestly? These keto chicken enchiladas might be the recipe I’m proudest of. Every component is intentional, every ingredient earns its place, and the result is something that doesn’t taste “keto” or “low carb” or “diet” — it just tastes like really, really good enchiladas.
At 4.9g net carbs and 28g of protein per serving, this recipe is keto-friendly and family-approved. Let’s get into it.
What Makes These Keto Chicken Enchiladas Different
Most low-carb enchilada recipes online take a shortcut: jarred enchilada sauce poured over a low-carb tortilla. That’s not what we’re doing here. The whole heart of this dish is the homemade roasted salsa, and once you taste it, you’ll never go back.
Here’s what sets these apart:
Charred vegetables. Tomato, white onion, and garlic are broiled until blackened in spots. That char is where all the flavor lives — it adds depth that no jarred sauce can replicate.
Two kinds of dried chiles. Pasilla negro chiles bring a deep, almost raisin-like sweetness. Chiles de árbol bring the heat. Together they create a balanced, smoky salsa that has actual personality.
Bone broth instead of water. A small detail that changes everything. Bone broth gives the salsa body, richness, and a savory backbone that water just can’t.
The right tortilla. I use Hero Tortillas because they hold up to dipping in hot salsa without falling apart, and they don’t taste like cardboard. They keep this recipe at 4.9g net carbs per serving.
Ingredients You’ll Need
For the salsa:
- 114g plum tomato, trimmed and halved
- 107g white onion, trimmed and peeled apart
- 33g garlic
- 15g pasilla negro chiles, stemmed
- 3g chiles de árbol, stemmed
- 1.5 cups Butcher’s chicken bone broth
- Salt and pepper to taste
For the enchiladas:
- 8 Hero tortillas
- 1 lb (435g) shredded chicken
For garnish:
- 25g thinly sliced white onion
- 3 oz thinly sliced green cabbage (about ½ head)
- 25g cilantro, minced
- 45g crumbled queso fresco
- Crema drizzle (1 tbsp sour cream + 1 tbsp heavy whipping cream, mixed)
How to Make Keto Chicken Enchiladas
Step 1: Char the Vegetables
Preheat your oven to broil. Spread the tomato, onion, and garlic on a baking sheet and broil for 3-5 minutes until well charred. Flip and broil another 3-5 minutes. Let everything cool.
Step 2: Blend the Salsa
Once cool, transfer the charred vegetables to a blender along with the dried chiles and bone broth. Blend until smooth. Season with salt and pepper to taste. This is where the magic happens — the smell alone tells you you’re onto something.
Step 3: Warm Everything
Heat the salsa in a pan large enough to dip a tortilla into. Stir a few spoonfuls of the warm salsa into your shredded chicken before reheating it — this keeps the chicken juicy and makes sure every bite is full of flavor (don’t skip this step, the chicken will go dry without it). Wrap the tortillas in a damp paper towel and microwave for about 15 seconds to make them pliable.
Step 4: Assemble
Dip each tortilla in the warm salsa. Place on your serving platter, add a portion of warm shredded chicken, and roll up. Repeat for all eight tortillas.
Step 5: Top and Serve
Spoon more salsa over the rolled enchiladas. Top with sliced cabbage, onion, cilantro, crumbled queso fresco, and a drizzle of crema. Serve immediately.
Tips for Perfect Keto Enchiladas
- Don’t rush the char. The blackened spots on your vegetables are flavor — let them happen.
- Adjust the heat. Two chiles de árbol gives a noticeable but manageable kick. Add more for spicier, fewer for milder.
- Use freshly shredded chicken. Rotisserie chicken works in a pinch, but home-cooked shredded chicken pulls flavor better.
- Make the salsa ahead. It actually tastes better the next day, so you can prep it 24 hours in advance.
- Great for meal prep. You can prep all the ingredients separately — char and blend the salsa, shred the chicken, slice the garnishes — and just assemble fresh whenever you’re ready to eat. Way better than reheating fully assembled enchiladas.

Frequently Asked Questions
Can I make this dairy-free? Skip the queso fresco and crema, or substitute with dairy-free alternatives. The salsa and filling are already dairy-free.
How long do leftovers keep?
Honestly? Use your nose. My rule is simple — I keep food until it either smells off or I just don’t want to look at it anymore. Trust yourself on this one. If it smells, ditch it.
Can I freeze the salsa? Yes — the salsa freezes beautifully for up to 3 months. Thaw overnight in the fridge.
