- 3-4 eggs

How to Make Them
- Crack the eggs into a bowl and whisk just enough to combine — don’t overdo it.
- Heat the butter in a nonstick pan over low heat. Low. Not medium. Not medium-low. Low.
- Pour in the eggs and immediately start gently stirring with a spatula or wooden spoon. Keep it moving — slow circles, scraping the bottom.
- Keep stirring as the eggs slowly come together into soft, small curds. This takes 3-5 minutes. Patience is the whole game here.
- Just before the eggs are fully set, add the cold cream cheese cubes. Fold them in gently — they’ll start to melt into the eggs, creating little molten pockets.
