Buffalo Wings Dip

Keto Buffalo Wings Dip

All the flavor of buffalo wings, in dip form, with crispy bacon strips for dipping. The recipe that disappears at every party.

I’ve made a lot of dips over the years. Some good. Some forgettable. None of them get demolished at parties the way this one does.

This is my keto buffalo wings dip — all the flavor of buffalo wings without the wings, dipped with crispy bacon strips instead of chips. It’s the kind of thing I bring to a gathering and end up watching disappear within the first 20 minutes. It’s also one of the easiest impressive recipes I have, which is the best combination there is.

At 1.1g net carbs and 11.4g protein per serving, this dip fits keto, low-carb, and high-protein eating plans. Game day, holidays, dinner parties, or a random Tuesday — this one works for all of it.

Why You’ll Love This Recipe

  • The flavor of buffalo wings in dip form. All the heat and tang, none of the bone work.
  • Crispy bacon strips instead of chips. Once you try it, chips feel pointless.
  • 1.1g net carbs and 11.4g protein per serving. Real macros that fit your plan.
  • Make-ahead friendly. Assemble earlier in the day, broil before serving.
  • Crowd-pleaser status. Even non-keto guests demolish this every time.

Ingredients You’ll Need

For the dip (makes 20 two-tablespoon servings):

  • 13 oz shredded chicken — rotisserie chicken works perfectly.
  • 8 oz cream cheese — the base of the dip.
  • 1 bottle (13.75 oz) Yo Mama’s buffalo sauce — the cleanest buffalo sauce I could find. Worth seeking out if you can.
  • ½ tsp granulated garlic
  • 3 tbsp KetoWilder homemade ranch powder — recipe below.
  • 1 scallion, sliced
  • 200g shredded whole milk mozzarella
  • 200g shredded sharp cheddar

For the homemade ranch powder:

  • ½ cup cultured powdered buttermilk
  • 2 heaping tsp parsley
  • 1.5 tsp dried dill
  • 2 tsp granulated garlic
  • 2 tsp onion powder
  • 2¾ tsp Redmond salt
  • ½ tsp black pepper
  • ½ tsp dried chives
  • ½ tsp celery powder
  • 1 tsp citric acid

For serving:

  • 1 lb crispy bacon — cook it extra crispy so it holds up to dipping.

How to Make Keto Buffalo Wings Dip

Step 1: Make the Ranch Powder

Combine all the ranch powder ingredients in a bowl and mix thoroughly. Store in an airtight container — you’ll use 3 tablespoons of it in this recipe, and the rest will last you for everything else you want to put ranch on.

Step 2: Melt the Base

In a pan, combine the cream cheese, buffalo sauce, and ranch powder. Stir over medium heat until the cream cheese is fully melted and combined into a smooth, orange, ranch-flavored buffalo base.

Step 3: Build the Dip

Add the shredded chicken, sliced scallions, and 100g each of the cheddar and mozzarella (half of each cheese). Stir to combine until the cheeses melt into the dip.

Step 4: Transfer to a Casserole Dish

Once the dip is melted and combined, transfer it to a casserole dish. Top with the remaining 100g of cheddar and 100g of mozzarella.

Step 5: Broil to Golden

Place under the broiler for 5-7 minutes, until the top is hot, bubbly, and beautifully browned. Watch carefully — broilers move fast.

Step 6: Serve with Crispy Bacon

Serve hot, with crispy bacon strips alongside for dipping.

Expert Tips for the Best Results

  • Cook the bacon extra crispy. Floppy bacon can’t dip. You want it crisp enough to hold its shape through a generous scoop of melted cheese and chicken.
  • Use the cleanest buffalo sauce you can find. Wilder uses Yo Mama’s because it’s the cleanest she could source. Most buffalo sauces have hidden seed oils and weird ingredients — read the label.
  • Make the ranch powder ahead of time. It takes 5 minutes to combine and lasts months. Use it for this dip, on salads, on roasted vegetables, mixed into mayo for a dressing — anywhere ranch flavor fits.
  • Don’t skip the broiler step. The browned, bubbly top is what takes this from “good dip” to “impressive dip.”
  • Watch the broiler closely. Five minutes can become seven, seven can become burnt. Stay near the oven.

Variations & Substitutions

  • Use rotisserie chicken to save time on the shredding step.
  • Adjust the heat by using a milder or spicier buffalo sauce, depending on your crowd.
  • Different cheese combinations work — pepper jack adds extra heat, Monterey Jack is a milder option.
  • Add blue cheese crumbles on top before broiling for a more classic wing experience.

Storage & Meal Prep

Use your nose on this one — keep it until it either smells off or you don’t want to look at it anymore.

Refrigerator: Store leftover dip covered in the casserole dish. Reheat in a 350°F oven for about 10-15 minutes until warmed through.

Make-ahead for parties: Assemble the entire dip in the casserole dish (steps 2-4), cover, and refrigerate. When ready to serve, top with the remaining cheese and broil. Saves you stress on the day of.

The ranch powder: Store in an airtight container. Lasts for months.

Frequently Asked Questions

Why use bacon as chips instead of pork rinds or celery? You can use either of those too. But there’s something about crispy bacon as a dipping vehicle that makes this whole dish feel indulgent in a way regular chips can’t. Pork rinds are great in a pinch. Celery is fine if you want something cooler. Bacon is the upgrade.

Can I use store-bought ranch seasoning instead of the homemade ranch powder? You can, but most store-bought ranch packets contain seed oils, MSG, and added sugars. Making your own takes 5 minutes and gives you total control over what’s in it. It’s worth doing once.

Why Yo Mama’s buffalo sauce specifically? It’s the cleanest buffalo sauce I could find — no seed oils, no added sugar, real ingredients. Most buffalo sauces on the market are loaded with stuff you don’t want. If you can’t find Yo Mama’s, read the label of whatever you grab and look for one with the shortest, cleanest ingredient list.

What is citric acid and why is it in the ranch powder? Citric acid gives ranch its signature tangy flavor — it mimics the buttermilk acidity in fresh ranch dressing. You can find it on Amazon or in the canning section of most grocery stores.

Can I make this in a slow cooker? The recipe is built for a pan + broiler, but you could absolutely keep it warm in a slow cooker on low for a party. Just make sure to do the broiler step first to get that golden top, then transfer to the slow cooker for serving.

How do I make the bacon crispy enough for dipping? Bake bacon on a wire rack over a baking sheet at 400°F for 18-22 minutes. The wire rack lets the fat drain and crisps the bacon evenly on both sides. Trust me on this one.
