Ingredients

Makes 15–18 Fritters

  • Extra virgin olive oil, for frying
  • 357g cow’s milk ricotta, well-strained (I used my Homemade Ricotta)
  • 1 large egg
  • 40g grated Parmigiano Reggiano
  • 1½ cups pork panko
  • 1½ tsp baking powder
  • Fresh parsley, finely chopped
  • Salt and pepper, to taste
Instructions
  1. In a medium bowl, mix ricotta, egg, salt, pepper, and Parmigiano until smooth.
  2. Fold in pork panko, baking powder, and parsley.
  3. If the mix feels too wet, add a bit more panko. The texture should be like a dry cookie dough.
  4. Heat olive oil over low heat in a skillet.
  5. Spoon about 1–2 tablespoons of the mixture into the pan and flatten gently.
  6. Cook for roughly 2 minutes per side, until golden and crisp. Flip carefully — they’re delicate while hot.
  7. Serve warm with tomato sauce or fresh herbs on top.

  • Strain your ricotta well. The less moisture, the crispier the fritter.
  • Low and slow heat. Olive oil burns fast; gentle heat gives that perfect golden edge.
  • Get creative: try lemon zest, chili flakes, or smoked paprika for a twist.
