Ingredients
Makes 15–18 Fritters
- Extra virgin olive oil, for frying
- 357g cow’s milk ricotta, well-strained (I used my Homemade Ricotta)
- 1 large egg
- 40g grated Parmigiano Reggiano
- 1½ cups pork panko
- 1½ tsp baking powder
- Fresh parsley, finely chopped
- Salt and pepper, to taste
Instructions
- In a medium bowl, mix ricotta, egg, salt, pepper, and Parmigiano until smooth.
- Fold in pork panko, baking powder, and parsley.
- If the mix feels too wet, add a bit more panko. The texture should be like a dry cookie dough.
- Heat olive oil over low heat in a skillet.
- Spoon about 1–2 tablespoons of the mixture into the pan and flatten gently.
- Cook for roughly 2 minutes per side, until golden and crisp. Flip carefully — they’re delicate while hot.
- Serve warm with tomato sauce or fresh herbs on top.
